Se Chung

Se Chung means “colorful variety” and refers to the style of oolong tea made in Anxi County, Fujian Province, China. It is created using a shorter fermentation period compared to other oolong teas from the province, offering a light grassy green character. Oolong tea is partially oxidized and has taste characteristics of both green and black tea. Fresh leaves wither for one to two days, then are rolled to release enzymes necessary for the next step. The leaves are then allowed to oxidize for a shorter period than black tea, and the process is stopped before completion. The tea is heated to prevent further oxidation and to dry it. Tea gardens are located in western Anxi at an average altitude of 600 meters, surrounded by mountains and forests, with annual rainfall of 1700-1900 mm and humidity of 78%, misty and humid, with an average annual temperature of 15-18 ℃ and a frost-free season of about 300 days. The special ecological environment and acidic-red soil make the tea leaves thick and fatty with a bright fresh green color, suitable for Se Chung Oolong tea.
